
In a bowl mix sesame oil, soy sauce, sugar, mirin or wine and ginger. Set aside
In a large skillet on med-high heat, add half the canola oil, the chicken, salt and pepper. Cook about 7 minutes. Remove the chicken from skillet and set aside.
On medium heat, add the rest of the canola oil, the celery and carrots. Cook about 5 minutes.
Add the green onions and, cook until the vegetables are cooked but still crunchy.
Add the chicken and the sauce and let the sauce thickened. About 2 to 3 minutes.
Add the Black Garlic and stir.
