Black Garlic Zucchini Pasta

 454g (1 lb) pasta
 125ml (½ cup) olive oil
 2.5ml (½ tsp) crushed hot red pepper flakes
 1 medium zucchini cut into sticks
 60ml (¼ cup) chopped parsley
 Salt and black pepper
 5ml (1 tsp) grated or finely chopped lemon zest
 5ml (1 tsp) lemon juice
 125ml (½ cup) grated Parmesan cheese plus extra for garnish
 60ml (4 tbsps) Black Garlic cloves chopped

Cook the pasta according to instructions. Drain.

In a saucepan at medium heat, add olive oil, chili flakes and zucchinis. Cook for 2 minutes.
Add lemon zest and juice and parsley. Toss in the pasta, season with salt and pepper.
Remove from heat, add cheese and Black Garlic. Toss and serve.
