 454g (1lb) boneless chicken thighs or breasts cut in small pieces
 4 celery ribs, sliced thinly at a slant
 4 green onions, sliced thinly at a slant
 2 carrots, sliced thinly at a slant
 45ml (3 tbsps) Black Garlic cloves roughly chopped
 65ml ( ¼ cup) canola oil
 35ml ( ⅛ cup) sesame oil
 30 ml (2 tbsps) soy sauce
 8ml (1 ½ tsp) sugar
 30 ml (2 tbsps) mirin or white wine
 5 ml (1 tsp) fresh ginger minced
 Salt and Pepper to taste

In a bowl mix sesame oil, soy sauce, sugar, mirin or wine and ginger. Set aside

In a large skillet on med-high heat, add half the canola oil, the chicken, salt and pepper. Cook about 7 minutes. Remove the chicken from skillet and set aside.

On medium heat, add the rest of the canola oil, the celery and carrots. Cook about 5 minutes.
Add the green onions and, cook until the vegetables are cooked but still crunchy.
Add the chicken and the sauce and let the sauce thickened. About 2 to 3 minutes.
Add the Black Garlic and stir.

Yields 4 Servings
Serve on rice. You can easily replace the chicken with shrimps
